Reflection.
As my first post, I find it only fitting that I return to a feeling incredibly reminiscent of past times. But before describing that feeling to you, let me begin by filling you in on my intention of this page.
I am, and forever ever will be, a food lover. And as I set forth on quite possibly the most incredible journey of my life, thus far, I racked my brain trying to come up with a way to share tales of my travels in the best AeRi-way possible. And in the end, my passion for food became the obvious answer.
So as I hop-skip-and-jump my way around the world, I hope to provide some insight to culture and my own happenings through the means of food; simultaneously, making your mouth water and encourage you to delve into new flavors, recipes & restaurants.
I have consistently found comfort in baking and as my departure date for Cape Town, South Africa not-so discreetly creeps closer and closer, my baking has escalated. I recently found myself at 3am covered in flour; the only way I could find solace that evening, I suppose. The answer to my insomnia: Carrot Pecan muffins.
Thanks to Clement Street and all of it’s wonders the key ingredient to the recipe received an extra boost, thus allowing me to use quite possibly THE largest carrots I’ve ever seen

(keep in mind that the platter on which the carrots are resting is 12inches in diameter!)
This is one of my favorite recipes which I discovered at least 8 years ago and as I whisked, chopped, spooned and then waited, I realized the appropriateness of this specific baking endeavor; despite the uncertainty the near future holds, old friends (muffins in this case) create comfort in ways which oftentimes go unnoticed. My beloved Green Applers along with the apartment-mates reaped the benefits of my sleep deprivation.
